Rating:  Summary: This is a great cookbook. Review: I love this cookbook. It gives all the basics and more. His style is direct, to the point, and very readable. It's full of opinions. I'm giving to my children for the basics, and to my friends who are experienced cooks for new recipes.
Rating:  Summary: Just what I needed! Review: I bought this four days before throwing a big party and boy, did it come in handy! I ended up making roasted buttered nuts, guacamole, mulled cider, tapenade, and fudge -- all recipes I'd never made before, all terrific successes. I have about three dozen cookbooks, each more specialized than the next. I also have the original New York Times Cookbook and the old Joy of Cooking -- but both of those are really meant for older palates. This book is just what I was longing for: a cookbook that deals calmly with the basics and encourages variation. I love Mark Bittman's column, "The Minimalist," in the food section of the Times, and this is a most welcome addition to my cookbook shelf.
Rating:  Summary: Well written, good suggestions, and not tons of ingredients. Review: After having used and read alot of cookbooks, this one was delightful to used and read. The recipes are interesting and have been fun to make.
Rating:  Summary: fabulous philosophy, so-so recipes Review: I read this book cover to cover, which I have never done with any other cookbook, and loved the author's approach to cooking. As a relative neophyte to cooking, I especially appreciated Mr. Bittman's emphasis on acquiring intuition about what things to put together and how to improvise. I would have given this book 5 stars except that the quality of the recipes is inferior to the quality of the prose. In all four of the recipes that I recently tried, the proportions for the ingredients were off and I had to figure out ways to rescue the dishes. I guess I learned a lot--it certainly taught me to improvise--but I would have liked the recipes to be better in this otherwise excellent book.
Rating:  Summary: Fantastic! Review: This book is a great idea for people like me that want a family in the future and don't want them to dread 'mom's cooking' all the time. It's great for people who are just starting out and a great mind refresher for the mature chef out there.

There is good basic information combined with some interesting recipes but most of all is a presentation that anticipates and encourages creativity. Experienced cooks will enjoy the frequent variations that are suggested.

Rating:  Summary: My search has ended! Review: Everytime I buy a new cookbook I think maybe this will be the ONE that I will be able to use every day. Until this book,that has never happened. I can finally give away almost every other cookbook I have since I bought this book. Every recipe that I have tried has been great. This is the Joy Of Cooking for the new generation. I highly recommend this wonderful book.
