Summary: Best bread baking book I have read
Review: I've read chapters of other books on bread baking, but this subject is too often simplified. This is an excellent book and illustration of not only how to prepare and bake bread, but also why these techniques are necessary.

None of it is overcomplicated, this book makes sense out of bread making, if you are patient.

Summary: learned what I needed to know
Review: After being an ametuer baker for years, I picked this up and learned a lot about how to fix my bread. My family swooned over my cold water pizza dough, and my slipper bread tastes like Rome. While I have learned a few things I needed to know,(like about biga, and poolish and benching) i would not recomned this book to a beginner, or someone like me who does not measure or weigh, and wants to be happily ignornat, but still baking. (If you are just getting into bread, NO Need to Knead, is a wonderful book. I still use it for my basic book. )
The cold water dough recipe is mind blowing, runs agianst all logic to make dough with ice water, but the pizza was incredible. its a wonderful book, geared for students, great pictures, incredible information, but mostly slow two day rescipes.
and I had a blast baking this past weekend.

Review: Well I usually do pros and cons for video games so I'll do that for this too

*Teaches you the basics and the more advanced
*The end result is great bread(Trust me on that one)
*Teacher you how to make sweets, healthy bread, the basic delicious bread and more
*A great book for the beginers, and more advanced

Summary: In-depth Instructions, for the serious bread lover
Review: I can't add much to the already glowing responses to this awesome book that hasn't been said above. You don't have to be a professional baker to learn from this book, and it seems to fulfill the needs on many levels. Bring your calculator and your love of real bread, and Peter will teach you how to make it better than you thought you could. He also gives the individual a great peek into professional bakeries. Learn the lingo and techniques of the pro's, and go home and bake like one.

Summary: A must for any serious cook
Review: I've never been big on cookbooks, but looked this one up on recommendation. I've long been able to make tasty and reasonably attractive bread, but this book has transformed the way I deal with dough, and the finished products are amazing. It's very thoughtful, and Reinhart's passion for the perfect loaf shines from cover to cover. The best book on cooking of any type I have ever used, bar none. If you are serious about baking, or just love good bread, you must own this book. The pictures alone are amazing.

Summary: Excellent bread baking book
Review: I've recently started baking bread by hand again (after the bread machine broke) and have had wonderful results with these recipes. Reinhart makes clear distinctions between various types of ferments - and the directions and photos are outstanding. I'm buying his other book Crust & Crumb next. You won't be disappointed. This book is a keeper.

Summary: Bread-baking 101 at its best!
Review: The is the definitive bread book. It will make a bread baker out of one who was never successful at baking bread before. The reason for this is simple. Before providing his readers with a nice sampling of recipes for various kinds of bread, the author takes the time to explain in great detail the art of breadbaking. This includes such often overlooked things as what each of the ingredients does, what chemical reactions take place, and what impedes the process of ending up with a successful product. Once the book is read and the recipes tried, there is no reason someone can't take any bread recipe and modify it to be a tasty and delicious treat.

Summary: Peter is great
Review: Each book of his keeps getting better and better. A nice broad array of bread recipes. They take longer than recipes from a bread machine bread book, but not all of the recipes take too long. Most of them require some work the night before baking, some work the morning you want to bake, and then baking in the afternoon. Doable on a weekend even if you work all week.
