Rating:  Summary: Culinary Artistry -- a good guide! Review: After reading CULINARY ARTISTRY, I understand the food industry, and specifically the mindset of culinary professionals, better than I did before. Especially valuable in this book is the listing of "flavor pals", which is an excellent quick-reference for matching flavors. It spreads the palette of food flavors before you, allowing mixing and matching of complimentary (or disparate) taste elements in your own creations. This is a very handy reference book, and one that I recommend strongly.
Rating:  Summary: Fantastic Resource for Menu and Entree Planning Review: This is truly a unique book, since it deals with putting together creative menus by giving first of all the ideas of prominent chefs. Second, and what I find this work truly uselful and unique for is a listing by ingredient with its pairing with other ingredients, spices, herbs, fruits, nuts, etc.This book is getting well-worn and will be for the serious, cretive cook who wants to start coming up with some of their own creations.
Rating:  Summary: Duh, what the hell is this? Review: I ordered this book, it came, I scanned it and went 'boy, this is useless'. That was four years ago or so and have since discovered that every time I pull pork chops from the freezer and go 'what should I do with this?' - I reach for Culinary Artistry - look under pork and see what other ingredients, spices, wines, cheese - go with it. Its a great way to validate your own instincts about what to combine with what.
Rating:  Summary: By my side Review: I initially bought this book, because it was the sequel to Becoming a Chef. Since I have graduated from culinary school, this book has not left my side. The charts of seasonality and flavor combinations are essential for any chef or apprentice chef. There are recipes which can be chenged and manipulated any way the cook sees fit. Culinary Artistry is unbiased view of what some chefs deem important need to know information about certain types of food. This book makes me want to write a cook book. Any home gourmande will also love this book, it holds ingredients in the best light possible. Telling how and why to buy seasonally, to shop at local markets within your area, to support local businesses and people. If you are passionate about food and cooking food, you WILL love this book.

Rating:  Summary: Catering Manager's Essential Reference Review: Another group for whom this book is a must have is Hotel (and catering cos) Catering Sales Managers. No other book is more helpful when it comes to creating custom menus for clients, especially when one has that creative block in trying to find the perfect product, sauce or accompaniment pairing.

Rating:  Summary: Required reading for any professional chef. Review: The title of this book is misleading. I originally thought it was about plate presentation, but soon learned it covered so much more (including flavor principles, creating a dish, writing a menu, and evolving a style of cuisine). Culinary Artistry should be required reading at every cooking school in the country!
