Summary: Finally-the perfect crust!!!
Review: Pizza is one of my families' favorite foods. Through the years I would occasionally make my own and was fairly happy with the results. I never was completely satisfied with the crust though. A recent trip to New York (and Ray's Original Pizza!) inspired me to try to recreate a New York pizza in my own California kitchen. I tried several different crust recipes but none really came out the way I wanted. After reading the great reviews here I decided to order this book. Well now I finaly have a crust I am happy with. It has that nice chewy texture that the pizza parlors have! I rate the content 5 stars but only rated the book 4 stars because it didn't have any color pictures. I love seeing pictures of the finished product in my cookbooks and this didn't have any. If you're looking for great homemade pizza though you will definately find it here!

Summary: The Pizza Nazi
Review: Remember the "Soup Nazi?" Well this adventagious author is not far off, from the Seinfeld episode. His enthusiastic love for pizza has come to us, through the gift of the pen. Not only did I find this book extremely easy to follow; I found that it is also extremely informative. So many styles and flavors, it was a difficult struggle, not to feast for days. From the famous original pizzas, to those of an exotic nature, Dominick A. Deangelis, has "hit the spot." Surely, I would suggest that you pick up a copy. Not only will you be 100% satisfied, but you may also begin a regular Friday night dinner regimen with your family.

Summary: A great book on making American-style Pizza!
Review: There is Pizza the traditional Italian way, and Pizza the American way. Mr. DeAngelis's book is about how to make the Pizza that can be found in the best American Pizza parlors. I'm sorry that a previous reviewer was offended that the book had nothing to do with teaching pizza making the traditional Italian way, but a book published in America will be for American tastes, not Italian. If you desire to make delicious Pizza that can rival the kind we've all had in those little family-owned places that can be found in cities like Pittsburgh, Philadelphia and New York, then this book gives you all the needed information. Of course, you'll have to practice, but you'll like the results. As for traditional Italian Pizza, you'll have to do your research, but a book worth looking into would be "Pizza Napoletana" by Pamela Sheldon Johns and, Richard G. Jung.

Summary: BUY THIS BOOK! You won't regret it!
Review: This book ROCKS! It is straight to the point, easy to follow and once you get the hang of making the crust, it's simple. I've had the book for about a month and the very first pizza I made was great and they keep getting better! I would recommend this book to anyone who loves pizza and has a Kitchen Aid type stand mixer (unless you really like to knead by hand).

Summary: Perfect Dough
Review: This guy knows what he's talking about.

You might spend years, and read many pizza cookbooks, before you find the perfect dough. That dough is the one in this book.

I've been cooking a long time. 40 years. I've even run and been chef at a diner. Listen: Mr. DeAngelis knows how to make the perfect pizza. And many of his "toppings" recipes are also excellent.

If you are interested in giving your family and guests pizza dinners that are better than they can get anywhere in town--get this book and use his ideas.

Review: This is a excellent book but it's a little confuse when the author try to compare the "the art of making pizza" with his career, have goods receipts, but i spect a book more american pizza style.

Summary: Dough worked perfect first time!
Review: This is my opinion: Save your money! I have made the dough four times with high gluten flour and all four times IT DID NOT WORK! I made it twice in the breadmachine, once by hand and nearly broke my wrists kneading it and once in a mixmaster with dough hooks. I followed the directions and put it in the refrigerator for up to 20 hours. When I tried to shape it into a pizza shape IT WOULD NOT DO ANYTHING! Last night I cut it into little pieces and used them as juggling balls. That's the only thing I could do with it.

There are some good ideas in the book such as dough dressing, what type of cheese, sauce recipe and the homegenisation of the dough. But the dough process needs to be explained in more detail as I have followed the instructions TO THE LETTER and it DID NOT WORK! I have wasted my money on two bags of high gluten flour which cost over $3.50 each.

I consider myself to be a good cook so I don't think it's me!...

Summary: By far the best pizza book ever!
Review: While this book does contain recipes, the primary focus is on the "art" of making pizza. Everything from the correct type of flour to use to kitchen tools to help you bake it. Even if you only learn one tip from this book, it will by far improve the pizza you make. Since I got this book I've been making a pizza every week, trying different hints and suggestions from this book, and every week my pizza gets better! A must have for anyone who loves pizza!
