Rating:  Summary: Good variety and very detailed... Review: ...but almost all the recipes in this book require gluten. There are books available that include recipes with bread flour, but no gluten. It seems that the gluten in bread flour is enough for those recipes. Why would I go to all that trouble to get gluten which is not a naturally found ingredient in ordinary kitchens. And by the way, not everybody who uses Amazon lives in US. Gluten is NOT a convenient ingredient and makes a simple white bread unnecessarily expensive and inconvenient to make. There are very good alternatives.
Rating:  Summary: When the basics are wrong, what _can_ you trust? Review: After looking carefully at specific aspects of this book, I'm not only able to agree with the other reviewers about the problems they found but also can identify two very fundamental flaws: 1) Hensperger gets the "order of adding ingredients" backwards for the Zojirushi. Did she get the others right? 2) In many recipes she says "unplug the machine" at one point or other in the process, making it very clear that she's not familiar with how machines work....or the simple expedient of pressing the reset/cancel button to achieve the desired effect. When an author is so far off on basics like this, there's no point in wasting time finding out about the other mistakes, or in wasting money on the book. There are number of bread machine books out there that give the diversity of recipes Hensperger attempts, and do a far better job.
Rating:  Summary: Best Breadbook Yet ! Review: After numerous Bread Machine "short story" cookbooks now comes the complete story. The author has a wonderful understanding of bread. Her finesses of added ingredients are inspired. I have turned out bread that looks truly professional and tastes made at home. The hamburger rolls to die for. The cinammon swirl loaf was unbeatable. I've never had anything like that from my bargain bread machine.The index took me all of 5 minutes to figure out ,but it makes sense. The half toned boxes are filled with information. I loved this book the moment I looked through it. I loved it more when I plopped a pile of dough on my board that looked better than any I had ever seen or touched. It baked up into beautiful rolls after easy forming. I cannot believe the diversity the author displays. If anyone could write this definitive book on bread machine baking with such style and class it would be Beth Hensperger.
Rating:  Summary: Disappointed Review: After trying two recipes I am frustrated with this book! I've made the basic white bread, then the loaf with a banana. Both were flops. I noticed that the amount of flour seemed to be way off in the bread with banana. It was a sloppy mess without the addition of a lot of flour. Or could it be the addition of gluten?? Maybe I'll try one more, but that will be it.
Rating:  Summary: Big Disappointment Review: All right. I have been buying cookbooks for 30 years and I know I should have been more careful up front. BUT there are two huge problems with this cookbook. The first - the recipes for one pound loaves are almost non-existent. Presently, I have only a 1 pound machine. I am planning to buy a new machine, and it will probably be bigger, but in a two-person household, I don't need more than one pound loaves except on special occasions. I doubt that I am the rare exception here. The second problem - even more irritating than the first - the index is inadequate. I wanted to make a bread with coconut. I looked up in the Recipe Index to find recipes with coconut in it. All I found was "Coconut Milk White Bread." Then I went to the General Index which gave me a page number. "Toasted Coconut Bread" was there. I suspect that I was really being directed to information about coconut rather than to a recipe including coconut as one of its main ingredients. "Hawaiian Sweet Loaf" was not listed in either place. My experience with other ingredients was the same. For aniseed I could find "Anise Christmas Bread" but not "Moroccan Bread with Sesame and Aniseed." I love macadamia nuts, but could find no recipes listed under that entry. I did, however, find two recipes that have the nuts in it. The three stars I did give to this book are for the breadth of it. There is a wonderful assortment here. Just wish they were in one-pound recipes so I could try them. There are great appendices also. It almost makes me weep that a book so grand is also so unusable for me. Maybe in the next edition they will get it really right.

Rating:  Summary: MY NUMBER ONE BREAD MACHINE BOOK! Review: Hi! This book works perfectly with my Panasonic bread machine and I have had perfect bread practically every time. (only failure in a year was the flax bread!) I do not have any problems with the recipes being too dry. I even add a lot of whole wheat in with regular white recipes (3/4 white to 1/4 whole wheat) and it still turns out great as long as you add a little water to the dough to compensate for the wheat. (But the recipes I follow by the book do not require me to do so....) It does say SAF yeast is recommended but I was using that but switched to regular bread machine yeast (easier to find) and they STILL come out great. Each recipe will say for example "2 tsp. SAF yeast OR 2 1/2 tsp. bread machine yeast." so for regular bread machine yeast you need to use a little more but definately guaranteed results. (at least with the Panasonic SDYD250 machine... I know every bread machine model is different. For baking outside of the machine I have had no problem with that either. I have had no problem finding the ingredients even gluten, which is sold at my local supermarkets (and I live in the country in Wisconsin) so I am surprised a person would need to go to a specialty store in California to find gluten! (according to one of the reviews here) Try the sesame bread and the vienna bread! they are both quick and easy recipes that I make often. I am Vegan and do not consume dairy so anyone who is Vegan/Vegetarian can substitute milk for soymilk,egg replacer for eggs and agave nectar for honey and it works fine. Anyhow, give this book a shot expecially for ten bucks or so, I really feel it is worth it.
Rating:  Summary: the very best bread machine baking book ive found Review: I bought this book after reading through it at a local book store. it looked good. Its been even better than I hoped. I have never baked bread successfully before I got my machine. now i can't stop. I have never had a failure from this book. I found the additional information about ingredients very educational. I am now purchasing a hard bound copy. im giving my paperback as a gift along with a bread machine to a good friend who loves the bread ive made her family. in my opinion this book has everything a new bread machine baker needs to know. I have had so much fun modifying the recipts. adding and changing, learning and enjoying the results. I have other bread machine books. none of them is as fun as this one. my only complaint is that the index is not complete. I find wonderful things i want to try, then later i have to look long and hard to find them again. expecially the little extra things like what to do with left over bread or educational information. its mixed throughout the reciept texts with no seprate index. I still love it. If you can only have one book of this type, this is a great choice. fun fun fun.
