Summary: A Book the Baker Must Have
Review: An excellent tool for the culinary student or for the one one who has the desire to learn the ins and outs to baking.

It is easy to understand and the over 700 recipies are amazing. While I have not tried them all, I have lerned to make some excellent pies, cakes and breads...even some delicious crepes! Well worth the purchase!

There are two things I've been craving for, this book & a nice cup of s o y f e e. You brew just like coffee and NO CAFFEINE! I can't believe it's made from so ybeans cause it taste just like coffee. Look for it online at ww.s o y coffee.com. Like the book, a great find!

Summary: Excellent book for culinary students
Review: This was a required text in my baking class in culinary school. I must say the book is pretty heavy. However, it is well worth it because it has so much useful information that will help me when I'm working as a pastry chef later on. I also really liked the chapter on artisan breads. Some stuff in there, I haven't learned before. However, if you really want to know the kind of questions asked on baking class exams, I advise to also study the following:
Study Guide for Baking: Key Review Questions and Answers with Explanations by Melissa Heilman
Study Guide for Advanced Baking: Key Review Questions and Answers with Explanations by Melissa Heilman
Both these study guides helped me to get A's in my baking class and advanced baking class. Professional Baking by Wayne Gisslen is worth the money because this helped me to form the foundation of my knowledge on the subject.
