Rating:  Summary: A book for bread lovers and bakers Review: I loved this book! I have only checked it out from the library, but plan to buy it as soon as I have to turn it in. The recipes are easy and the results are delicious. As a long-time baker, and lover of new bread recipes, I really was astonished at how amazing these breads came out. I'll never need to go to a bakery again! I find myself wanting to try something new every night, and because the recipes are so easy, it is easy to do. I also love the writing style of the author and her encouragement to try new things. She still gives you implicit instructions so you can learn her techniques, but doesn't appear threatened at all that you might find something even better. Good for her! I can't say enough about this book or the recipes in it. I'm sold!
Rating:  Summary: Amazing bread, and no fuss Review: I saw a review of this book in Salon Magazine and was skeptical. But it makes truly amazing bread with a minimum of effort. The focaccia is truly some of the best I've ever had, and it's easy and quick enough to be able to make with dinner. I have always enjoyed baking bread, and it's a pleasure to be able to make something so good without long kneading and rising times. The other breads are very good too, even though they require a little more time. Try it -- it will amaze you!
Rating:  Summary: Bread out of the gate Review: I was taken with Suzanne Dunnaway's book. I have five bread bookd by prominent authors, and while a bread book junky, I wondered why I was buying yet another. I have been cooking forty years and I started at the beginning of the forty years trying to make bread. I would get discouraged and start again. About 20 years later, I said, "Wait a minute, women the world over are making bread, and you can't? This is the first bread book, out of the gate, that you can expect to get great tasteing Italian bread. I happen to like a chatty book, but if you don't, you can take a recipe and follow just those instructions (which are relatively effortless) and come up with something of quality and great tasting. Also there are recipes for children. Surely if children can make bread, anyone can. My only criticism is, this is yet another bread book that does not handle clean-up. As a good cookbook should have a great zucchini recipe,a great bread book should have mess control.

I had heard that one secret was to use a very wet dough, but had not seen a cookbook that used this technique. As I read the introduction to "No Need to Knead," I saw that author Suzanne Dunaway's recipes were just what I was looking for! I've made several recipes so far and am delighted with the book. The focaccia is the best I've ever made and as good as those I've had in Italy. And it truly takes only 90 minutes to make! The first time I made it, I had a hard time keeping my husband from nibbling it all away before serving it for dinner! Now I'll try mastering the other "daily breads." One of the best things about the book is the author's approach that takes some of the mystery out of bread making. She tells us that bread dough is forgiving and that bread is NOT difficult to make. I'm particularly happy to give up kneading dough--which I was never good at anyway. I heartily recommend this book to anyone who wants to make good bread but who may have been put off by thinking it was too difficult. The recipes are excellent, and the author's writing style is friendly and conversational. Her illustrations are charming. I finished reading the book and wished that I could meet the author in person.

Rating:  Summary: the book works Review: i've only done the first recipe from the book, but that in itself is worth the price. the "wet" focaccia, baked in a big cast iron pan, is wonderfully chewy and flavorful. a brilliant plan- start with something quickly rewarding and tolerant to variations, then lead the reader onward. i no longer fear making bread.

In an enjoyable style, the author tells all the tricks to making delicious Italian (and other) breads, and even includes recipes for things to accompany your bread.
