Summary: A Handy Book for Healthy Singles and Couples
Review: Cooking healthy meals for two is my goal each day and Eleanor's book helps me do that with confidence. While I miss seeing color photographs, I highly appreciate the simplicity of the recipes, the dietary information at the bottom of each page and especially Eleanor's own notes and serving ideas after every recipe. The Hungarian Goulash is one of my favorites, so far. Can't wait to try the Gingerbread Delight and the Curried Vegetable Medley.

The recipes are easy, fun, nutritious and tasty. I highly recommend this book to those who are cooking for one and who tend to neglect their dietary needs.

Summary: Easy and Delicious!
Review: Healthy Cooking for Singles and Doubles is a great quick-and-easy cookbook with lots of delicious and healthy recipes. It has been a wonderful source of menu-expanding options for my fiance and me. We are both very busy, and it's great to have so many healthy ideas at hand.

Summary: Simple, easy to follow recipes that all taste great!
Review: I have prepared many of the recipes in this book and none have been less than fabulous, and so easy too.

As a cookbook author myself, I got into a little trouble with my weight while testing recipes for a new dessert book. After a short stay at the Oaks Spa, tasting many of Eleanor's dishes, I was thrilled to be able to take home a book filled with these great recipes.

Even though the book is written for "Singles and Doubles," I had no problem doubling the recipes. My family had no idea they were eating low fat.

I have prepared the Ratatui (page 99) many times. Rolled up in a tortilla it is so YUMMY! I've also made Creamy Potatoes (page 91) over and over again. I've prepared dozens of the recipes and none tasted like "diet" food.

I'd also like to mention the artwork on the cover of this book is very attractive and looks very pretty sitting out on the counter.

Thank you Eleanor Brown for helping me lose some of my "dessert" pounds!

Summary: Not so tasty
Review: I have the book Healthy Cooking for Singles and Doubles, and I like it because it is simply written with few odd ingredients that are hard to find. It is also nice to have a book that has receipes that do not have many days of leftovers if you are just cooking for yourself. It is proof that simple is good. It is helpful to have calories and nutritional info for each receipe. I think this is a good book for busy people who want to eat healthy and not spend a lot of time, money and effort to do so.

Summary: Disappointed
Review: This book seems more like a collection of recipes from those grocery store checkout lane cookbooks but without the the creativity - or any pictures at all. While the book does try to focus on low-fat, there doesn't seem to be much use of fresh ingredients, instead relying on canned or pantry items. This book would better serve someone who hates to cook but would rather cook at home than eat out or someone who is a beginning cook. I am not a gourmet, but was looking for something a little more creative with the use of fresher ingredients. I was dissappointed with this book.
