Summary: Love it! Fast, easy, delicious meals.
Review: I have owned my copy for over 7 years.
During those 7 years most of the meals I have cooked have come right out of this book.

The "tortellini and spinach stew" and the "mostaccioli with garden fresh tomato sauce" alone make it worth the cost of the book.
If you can get your hands on some homegrown or heirloom tomatoes either dish is to die for.

Summary: "Meatless" doesn't mean vegetarian
Review: I received this book as a gift; otherwise I'd return it. I was stunned to find that the base for the vast majority of the "Soups, Stews, and Chili" is chicken or beef broth. The author adds a note that since the major part of the flavor comes from the beef or chicken broth she doesn't recommend using a veg. broth substitute. Ahem. I guess that the definition of "Meatless"needs to be changed to accomodate an author who can't come up with a tasty vegetable broth.

Summary: Terrific cookbook
Review: Not just for vegetarians. I turn to this cookbook regularly for easy-to-make recipes that are tasty alternatives to meat and fish dishes. Great for lenten meals. We especially like the recipe for Tortellini & Spinach Stew. The book does not have the scope of a Joy of Cooking type cookbook, but that's one of its pluses; it's not too big to look at each page. The recipes use standard ingredients and the instructions are brief.

Summary: My copy is old and beat up from use!
Review: This cookbook does not disappoint. The recipes really do take 20 minutes unlike a lot of the other "quick and easy" cookbooks I have, and the recipes have real flavor, unlike some other vegetarian cookbooks I've tried. The tortilla and curry rice soup are both favorites. I've tried many of the recipes and all were tasty and easy to make. A definite good buy.

Summary: My favorite cookbook!
Review: We've made many recipes out of this cookbook and like them all (my picky daughter even has a number of favorites). Typically we use this cookbook 3 or 4 times a week (or more!). The recipes really do take 20 minutes if you follow them exactly. There are some that depend on things like pre-sliced mushrooms. I slice them myself but it only adds a few extra minutes. Being vegetarian we use vegetable broth instead of chicken/beef broth, it doesn't distract from the recipes at all. Yum!
