Rating:  Summary: Low on the go Review: I saw Terri on Martha Stewart and the Vegi Enchilada she did was fast, easy and looked good. After buying the book, I tried that recipe, absolutely loved the flavor and put it together in 10 minutes! Hard to believe it was low-fat. My husband who is a meat and potatoes man actually tried the Vegi Enchilada and couldnt put his fork down. Knowing it is healthy AND tastes good is a bonus. I rarely, if ever, cook a meal but with these quick and painless recipe's I've gotten to be quite handy in the kitchen.
