Summary: My truffles are "all the rave"
Review: The author goes into a lot of detail on how and why to use certain ingredients, and what conditions call for certain measures to be taken during the process. For the experienced cook, with little experience making candy, I found the little treasure of a book very helpful - much more so than many other recipes from books dedicated to candy-making. I tried several truffle recipes prior to those in Ms. Welch's book and her's made the absolute best truffles I've ever tasted!! I made 125 of them for my wedding, and was told afterward that I should go into the chocolate business! No kidding!
