Summary: I was disappointed
Review: I give this book 3 stars for it's good points. The recipes don't contain too many ingredients (there are only 27 recipes in the whole book)and they would be good for people who are relatively new to tofu. By the time I paid shipping and handling on this and got what looked like a bunch of paper stapled and bent in half, I was disappointed by the content. In all fairness to the authors, I would like to mention the recipes it contains: Sweet potato pancake; egg-free mayo; olive nut spread; poppy seed dressing; marinated salad; tomato tofu salad; green onion dip; cream of mushroom soup; hearty vegetable soup; tofu burgers; quiche; spaghetti sauce; tofu-nut loaf with mushroom sauce; lasagna; grilled cheese-tofu sandwich; curried vegetables; eggplant szechuan style; bean curd soup; braised tofu; stir-fry vegetables; hot and sour soup; banana-apple shake; heavenly pie; milk shake; tofu-prune whip; Eastern-Western eggs and batter-dipped tofu.

Also, in honor of those who put this little booklet together, I would like to mention that there is a chart at the beginning of the booklet which contains a breakdown of nutrients, fat and cholestorol or tofu compared to dairy products and several meats.
