Rating:  Summary: The Cajun Bomber's Knock Out Cookbook" is undefeated cookin Review: "Da champ" Dale Bellard had a knock out idea in sharing his authentic cajun cuisine. I've tried several of his recipes, and boy, do I wish I had the money to hire him to cook for me, all the time! The characters in the book makes you feel like you know them personally, especially Dale, himself. What an interesting young life he had. A fighter to the end. I got goose-bumps when he talked about the old woman who gave him the incentive to finish his last fight, undefeated. Was she a ghost? Who knows? Anything is possible. Everything he's been good enough to share about his talent in the kitchen, has been nothing short of delicious. Chef Emeril has nothing on this boxing champ! I hope he finds the time to let us in on more of his recipe's in the future. A sequel would be another knock out! I wish I was a friend,or member of this man's family, as I'd love to sit at his table, to dine on his delightful food. My mouth waters at the thought! What a great book, what delicious recipe's, what an interesting character! Still a perfect record! Kudo's to Victoria Hobbs Olsen for another wonderfully written book. Glad to see she's able to take us on another one of her literary adventure's. A journey well worth attending. Please, keep up the great work, Ms. Hobbs.I daydream of visiting with Victoria of all places, on Harvard Yard! Curious....
Rating:  Summary: Proud is not the word..... Review: Colorful in every sense of the word, could not put the book down once I'd opened it. As the sister-in-law, and seeing this book finally produced and on the market for sale, I must say that I was not quite certain I'd see this day. However, it is here and the book is magnificient. Since I have experienced the cuisine first hand, (as well as the tales being told) I am now glad to be able to have recipes to follow in creating my own sumptuous dishes. Not a cajun, but married to the brother of this author, I have been blessed to have been able to sit at the tables of Dale, Mom and Pop, and of course my own husband--all of whom have prepared these recipes. Watching the preparation, I was never quite able to "catch" on to how to produce it. However, NOW Bro, watch out! 'Cause I'm on my way to Cajun food preparation heaven! I can vouch for the recipes and now I can vouch for this great, unique book that I am so proud to add to my cookbook collection and to step out and say, "my brother-in-law" wrote this. Hats off to you too, Victoria for the great way you put this book together!

Not knowing too much about the south or southern cooking, I went out and bought some cook books. This one was by far the most interesting, as well as down right delicious. Before too long, I got to impress both friends and family with astonishing cajun dishes. Thankyou Cajun Bomber.
