Rating: Summary: A Julia Child for English cooking Review: This book is, as he says in his introduction, a 'cookery book' not just a collection of recipes. There is a strong French influence, but the author is committed to English cuisine. Many anecdotes and a lot of technique surround the recipes, which range from simple to complex, and very traditional (English custard, Yorkshire pudding, sausages) to more unusual (melon/pear/cucumber salad, casseroled duck with Madeira and apricots). Sections on wine and ingredients are included. There is a whole chapter on the menu for his daughter's wedding (including the cake!) and others for parties and Christmas food. I highly recommend this book for anyone who loves to cook and who takes a real interest in cooking techniques.
