Summary: Book helped a lot!
Review: I was assigned this book in my culinary nutrtion class. It was quite interesting because it gave you an extensive knowledge of all the vitamins and minerals in foods. It is a must for any upcoming chef. If you want to know the type of questions to expect on nutrition culinary exams I would get the following:
Nutrition Study Guide for Food Service and Culinary Professionals: Key Review Questions and Answers (isbn: 1933023058). This book showed me what to study for and what was important for my tests. These two books helped get very good grades.
