You can eat low fat and not skip desserts with Betty Rohde's So Fat, Low Fat, No Fat Desserts, a collection of 180 low-fat and fat-free desserts. All are made with low-fat versions of common ingredients that you can find in your pantry or supermarket, such as fat-free margarine, egg substitute, light or fat-free cream cheese, and fat-free milk. Each recipe includes fat grams (but not total calories) and cooking time. Many recipes start with prepared mixes, making them quick and easy to prepare. For example, Pumpkin Puff Cake combines canned pumpkin-pie filling and angel-food cake mix, topped with a mixture of sweetened condensed milk, canned pumpkin, powdered sugar, instant vanilla pudding, and fat-free whipped topping. Total preparation and cooking time: 32 minutes. Fat grams: 0. "Hot Fudge Sundae Pudding Cake" has only 3 grams of fat in the entire cake--the "hot fudge" is brown sugar and cocoa. The most unusual recipe is "Faux Coconut Chocolate Cake"--the magic ingredient is sauerkraut!

Rohde shares her tips for modifying a high-fat dessert recipe: substitute cocoa for baking chocolate; add instant pudding mix to fat-free cream cheese for nonrunny frosting; substitute applesauce for oil; and keep fat-free frozen whipped topping on hand to thicken, thin, "fluff, puff, and stuff." --Joan Price
