Rating:  Summary: Raw: The Uncook Book Review: The is a wonderful cook book if you are into vegan or raw foodist lifestyle. It takes raw food to a whole other level but most recipes have a mile long list and you can't find half of the things in you local grocery store. Juliano also stresses to eat only organic and I don't have a health food store near. Honestly I haven't made anything from the book yet.
Rating:  Summary: Great gourmet raw food recipes Review: This book is not for the raw food beginner. There are other better books that introduce and explain the reasons for eating raw and offer simple easy recipes. Raw eating by its very nature is more time consuming in preparation and shopping than eating cooked. You can buy frozen TV dinners and microwave them in a few minutes. The reason I love Juliano's book is that not only are the pictures beautiful, but the recipes are absolute heaven! If you actually try creating Thai Pasta as my daughter and I did last night, you will experience something that you would pay $40 for in our local gourmet raw restaurant. The food was absolutely divine and it took over an hour to prepare plus additional time for finding the ingredients. We try to eat a mostly raw diet (we're not purists but enjoy experiencing outstanding health) and many of the recipes in Juliano's book are much more accessible. There's no question that he is a gifted chef who creates truly sublime food. You have to do some work to get those kinds of results but I think it's well worth the effort. I love his book and recommend it to those who love good food and are willing to do the work to create it!
Rating:  Summary: Great Idea! Great Concept! Fantastic Graphics! Ditsy. Review: Yes, I saw this on Food TV and thought, "Well... this is cool. High energy and skinny and tasty to boot is cool." and bought into it. The problem is the logistics of exotic fresh produce, If you're on the west coast this book may very well be cool. If you're in the midwest or north country or just plain rural America and you buy this book, pat your dog on the back and fire up a smoke, this book won't work for you. That's one issue. The other thing about this book is, it is ditsy, poorly organized, and extremely frustrating. Not you're standard cook book. For the everyman, this book is an overall certain dissappointment. The recipes may as well be in another language. I thought these issue were just me, and then I sold the book to some vegetarian health type friends of mine. They haven't made anything from the book because of the same issues I just addressed. So west coaster enjoy this book. Everybody else start making sausage.
Rating:  Summary: reader review Review: the author needs to do more research into what he is eating. Not all wine is considered vegan(Dinner at My House) Maple syrup is a cooked product, but it is an ingredient in his food. the book needs laid out better, with page numbers for where to find how to make his other ingredients that need preped ahead of time and then have all those things put together so that the need to be flipping pages for every other ingredient is deminished. example: to read one recipe i had to find 4 different pages. p18 sais that instead of his "rejuvilac", vegitable broth can be used, there is no mention on how to make a broth without the use of a stove top. putting vegitables in water to let them steep just doesn't work
Rating:  Summary: Maybe I'll make something someday! Review: I bought this book for cheap on a book closeout site, and I just love reading it. I have probably read the whole book ten times. The pictures are so beautiful! However, the long ingrediant lists always make me say "Maybe I'll try one of the recipes... next week!" This would be a good book to have if you have an herb garden so that you don't have to buy five or six bunches of herbs just to make one recipe. I LOVE avocados, and they are featured in (i would guess) over half of the foods. ... I have plans to get a dehydrator and am looking forward to trying some of the "baked" products. Juliano is an intriguing figure and I'd be curious to see him as a guest on the food network! If you live near a specialty foods store where obtaining the ingredients can be easy and cost effective (a difficult combination, to be sure) you'll do well with this book-- if not, maybe you'll just enjoy looking at the pictures like me! Other reviewers have pointed out the frustration that many of the recipes call for other recipes in them. An easy solution (though cheating) would be to just use the "real" item (if you are not a staunch raw foodist). Instead of making the "mellowkraut" just pop a can of saurkraut and there you go. Or just use real cheese instead of dehydrating sheets of fake cheese which only keep for three days anyway. Don't kill me for saying it, Juliano! But you work in a restaurant making this stuff all day and most of us just have half an hour to prepare our meals! The reason this book gets four stars is the slightly annoying "food substitution" that the author often employs, noted by a former reviewer. "French fries" are avocado slices wrapped in cheese-substitute. "Mashed potatoes" is cauliflower, nuts, and herbs in a blender. I thought it took nerve to actually have a recipe for salad which is basically "take whatever is in your refrigerator, chop it up, and put dressing on it." I think everyone makes that recipe sometimes, without the aid of a cook book! If I had payed full price for this book, I might like it a lot less-- but as it stands, I enjoy flipping through it and plan to use it (eventually!) to prepare healthy drinks, snacks, and foods for my daughter (once she's old enough to eat!) Viva vegetarian!

Rating:  Summary: High Level Cuisine Review: This outstanding book deserves a place in everyone's kitchen whether carnivore, vegan, or raw food enthusiast. The recipes are delicious and would be enjoyed by anyone who has even a tiny flair of gourmet in their heart. My only gripe about this book is that it could be so much more useful with some sort of meal planning guide. Most of the recipes require advance preparation (sprouting, marinading, etc) and a busy person might find it too dificult to use a lot of these recipes on a daily basis. As a result of this, I find myself using this book to create "highlight" meals for special occasions rather than exploring it for day to day cuisine. Even so, the author clearly is someone at the height of his game and is fantastically creative with this type of food. You really can't go wrong with anything in this fine book.
Rating:  Summary: you NEED a dehydrator also Review: I saw the author of this book on a show a few years ago and thought it would be a great book, so I asked for it for Christmas. I have never been able to use it as you need a quality food dehydrator to make anything. I just wish it was well noted that you had to have one to use this book.
Rating:  Summary: Great Book Review: My husband and I are new to vegetarian and we had no idea that raw foods could taste so great! I now want to go totally raw. Everything we've made from this book has been really great! You don't have to add extra's like salt and pepper since all the fresh herbs give the recipes such great flavor. You can reduce the amounts of some of the spices if you don't want it as spicy. Wonderful book! Definitely a one of a kind
Rating:  Summary: Delicious recipes that TASTE warm when they aren't warmed! Review: Juliano uses raw jalapeno pepper, fresh ginger and garlic to create a sense of warmth or heat to the palate! The recipes are delicious! He is a culinary genious! His names took awhile to get used to though - such as page 261: "Green Cream Cheese: Avocado! Slice and spread." and page 89 "French Fries" which is "Nacho Cheese" wrapped around avocado slices. Beautiful book! Some other reviewers were concerned about calories but you don't need to be when eating predominately raw diet; you will lose weight! only be concerned about the calories if you are eating cooked food.
