Rating: Summary: One Plate at a Time - review Review: A very easy to read cookbook. The question and answer section is a great idea. I enjoyed just reading the recipies, tips, and Q & A section. I'd like to see more cookbooks written in this manner.
Rating: Summary: Really delicious food, really easy to follow instructions! Review: Although not all the meals in this book are whip it up quick, EVERYTHING I have tried so far has been simply spectacular (And besides, true art takes time!) If you love traditional Mexican dishes, and recipies that have it all explained for you, I strongly reccomend this cookbook!!Not only are the recipies filled with tips for success, but each section has a wonderful narrative on the history and the origins of the foods on the following pages! My Husband always exclaims "Wow! this is JUST LIKE my Grandma used to make!!" even if it is my first attempt. Again, easy to execute instructions and wonderful results have made this my favorite cookbook, complete with chile-splattered pages!

Rating: Summary: Every recipe worked the first time I made them! Review: And how often does that happen? This cookbook is the BEST I have ever ever used. (I owe 100+ cookbooks) Why? Instructions are clear and easy to follow. The Q and A section really does answer the questions that occur to the home cook. The recipes themselves have been carefully tested in quanities that work for home cooks. Hats off to the proof readers - I have found no typos in the recipes. And lastly, these really are dishes you would want to make. I've bought sooo many cookbooks that were just too complex, too far reaching that have left me wrung out and too stressed to enjoy the meal. This cookbook is different. I've come home and have made Pork Loin in Tomatillo Sauce from scratch to table in hour with the last half hour in the oven leaving me free to set the table and make a salad....And when my husband takes leftovers to work - he always has a crew of coworkers asking him "Where did you get that takeout?" I have had no problem in finding the ingredients. Further, I've had no problems with fumes or smoke from roasted peppers - I just turn on the fan over the stove top and they quickly dissipate.
Rating: Summary: In a word, outstanding! Review: As a great fan of Bayless' restaurants and the happy owner of two of his previous cookbooks, but a person for whom leisurely cooking is often only a dream, this latest cookbook proved to be a dream come true. As wonderful as the recipes may be in Bayless' other books, they are often necessarily time-intensive, perfect for the weekends but a bit much for weekday evenings after a long day at work. This book is the perfect adjunct: it features wonderful, beautifully-balanced and flavor-intensive dishes that can be prepared much more quickly and readily. My wife and I are happily cooking our way through the book, and after some 15 or more dinners, we pronounce the book a gem!
Rating: Summary: The best for us Mexican food lovers Review: Bayless' books are always good, but this one seems made to help us home gourmets. He begins with the basic Mexican dishes (they are not the typical American Mexican fare, either) then gives a classical recipe, than some adaptations. His Shrimp Cervice and the CornFlakes Coated Snapper are out of this world. The genius of this cookbook is that it teaches us not only what good Mexican cooking is all about, but provides both foundations and building blocks for a lifetime of exploration into this wonderful cuisine which has just taken off in the past few decades. I'm sure this book will propel it into the 21st century.
Rating: Summary: Not for beginners.... Review: I looked through this book, curious to see if there were any Mexican recipes to try beyond the ever-present Taco Bell variety (not that there's anything wrong with that). This is a very good looking book, the recipes are detailed and sound delicious, however, without actually making anything, I have a feeling these recipes are not appropriate for the beginning cook. You would need many "exotic" ingredients not commonly found in many areas of the country; the recipes are very labor intensive; one would need a very good kitchen fan to deal with all that roasting of peppers; you are sternly advised that no substitutes are allowed. Fair enough, this is authentic Mexican cuisine. Maybe when the weather warms up I will track down all those peppers, etc., buy a pair of rubber gloves, and open up the windows and make something...authentic.
Rating: Summary: Should you buy another Rick Bayless cookbook? Review: I own both "Authentic Mexican" and "Rick Bayless' Mexican Kitchen," and I had reservations about buying this one as well, and I did not regret it. There is significant overlap in the recipes among the books, but I like the layout and organization on this one the best. This one would certainly be the best one for a beginner.
Rating: Summary: Authentic and EASY Review: I saw Rick on PBS and ordered the book. The recipes are easy to follow, with nice color photos of finished products. Some of the reviews I got after making the shrimp saviche (sp?) were the best I ever received!!! A must for anyone's recipe book collection.
Rating: Summary: Visiting Mexico Review: I'll keep it short and let you know that this is the best cookbook I have ever purchased. After seeing Rick on television, I knew he had a fantastic cookbook. I liked that he visited Mexico and included his favorite authentic dishes. I've cooked about 10 dishes out of his book and all of them have been exceptional!
