Rating:  Summary: Bayless falls short of former books Review: Rick Bayless knows a great deal about authentic Mexican cooking. This book, however, reads like an edited version of a TV introductory cooking show (which it probably is). His former books introduce the cooking of Mexican and Oaxacan cuisine with admirable quality and depth. The book is primarily basic corn kitchen and a few standards. Consisting of, essentially 34 recipes with two or three variations on each, the book is far less than it appears. He has some good sections on ingredients, but rarely complete: for example he has a section on tequila which never mentions pulque or mexcal (from his beloved Oaxaca) and while he calls for such things as avocado leaves and epazote he does not provide a source. On the other hand, he has a good section on internet resources.
Rating:  Summary: Not only is Bayless a great chef, he's a great teacher! Review: Rick Bayless's cookbooks are among the best because he is not content to supply recipes and instructions: he authentically cares what appears on your table and provides thoughtful conversation regarding each preparation. He anticipates problems for household cooks. He leads beginners through preparations unique to Mexican cooking. He is a teacher in the very best sense of the word! Remember that high school teacher or college prof who made all the difference? Rick Bayless's Mexico One Plate at a Time wants to be that kind of a cookbook.
Rating:  Summary: Good Cookbooks Are Hard To Find Review: The recipes in this book are incredible. I am about to buy every book that rick bayless has ever writen, because this one was so good. I really like the way that he lists whether the recipe is conteporary or a classic. P.S. The book is worth the price for the guacamole recipe alone!
Rating:  Summary: ¡Buen Provecho! Review: This book is truly passionate about Mexican food. And for good reason because true, authentic Mexican food is among the world's greatest cuisines. The book is centered around a few traditional dishes (or plates). Each one covers how to traditionally prepare the dish (with some allowances made for the conveniences the modern kitchen provide) as well as a few more modern (but still in the spirit) variations. There are plenty of mouth watering pictures (so mouth watering that I wished for more). My only complaint...maybe there could have been more recipies - there are 3 other books by Bayless, though, to fill the gaps. I found the Chili rellenos and Cochinita pibil to be to excellent and easy to recreate (though rellenos are time consuming). If you haven't seen the PBS series, check that out also. The book makes an excellent companion.
Rating:  Summary: A Great Book Review: This is a great book, no doubt about it. Unlike one of the other reviewer's, I did not find the recipes to be complex, just accurate. The hardest thing for me is that, since watching his tv show, I have a little Rick Bayless voice reading to me in my head when I pick up this book. And, what's the deal with that commercial for Burger King? I tried the sandwich based on Bayless's street credibility. It was disgusting. That 'baguette' turned out to be some sort of gummy bread-like product that no one would want to eat. I would expect him to have some input into the quality of any sandwich that he is helping to promote. This thing is junk. Why didn't they go with a bolillo or a telera? And why is he in a market in Los Angeles when the sandwich is called Santa Fe Chicken?

My husband asked for it on his birthday and since we like the dishes so much I plan to send a copy to my sister for her birthday. I find the recipes have a wide range of complexity and time required to prepare them. Although I will "cheat" and buy tortillas for my weekday menus instead of making them. We especially liked the Chipotle Chicken Salad Tacos which is a very quick and easy recipe for the weeknights. YUM.

It has many wonderful recipes, but Rick also discusses the history and culture behind some of the food. It is as much "sit-down" reading material as it is a cookbook. Well worth the money.
