Summary: A Must-Have Cookbook, Whether or Not You're Vegetarian
Review: I almost wish Jack Bishop hadn't put "vegetarian" in the title. I hope the connotation of that word doesn't deter meat eaters from checking out this book. These are fantastic recipes - they just happen to be meatless. I don't think there's a recipe in here that has more than 10 ingredients, and most have less than that. I've tried dozens, and haven't come across a bad one yet. The dessert chapter was a little disappointing, probably because I don't have an ice cream machine, but I have discovered the joys of strawberries with balsamic vinegar! This is the book I reach for whenever I want to make something easy and delicious - which is all of the time, of course!

Summary: This quickly became my favorite cookbook
Review: I bought this cookbook because I had some money, and watching Molto Mario on Food TV had made very interested in Italian cuisine. One of my regular dinner guests is a vegetarin, and I often think I'l like to swing more towards vegetarianism as well, so I went ahead and ordered this book sight unseen. It was a great purchase. I got the hardback, which is always nicer than the paperback. The recipes are well formatted, and always start at the top of a page. I've only cooked a handful of things from this so far, but they were all easy recipes to follow and I didn't encounter and snags. It is also packed with enough recipes that there is a chance for lots of diversity.

Summary: Absolutely Fantastic, My Favorite Cookbook, Inspiring!
Review: I come to you deliriously happy after having eaten Bishop's mozzerella and tomato tart with a basil and garlic crust. My husband had to be physically restrained from eating until he was in pain (I had to whisk the tart off to the kitchen, but he vowed to finish it late tonight). All this and I didn't even make the recipe right! I used canned whole tomatoes sliced (no fresh on hand), dried basil (again no fresh around), and didn't wait the extra hour to let the tart dough rest in the fridge before baking it. No matter, it was extraordinary. I'll need to go into a recovery program if I make it the right way! But this is the beauty of this book. He gives these extraordinary yet simple recipes and encourages you to think for yourself. Like his mentor told him and he passes along to us, take what is simple and good and bring it together. Inspired. This is one of those cookbooks that doesn't just give you recipes but gives you ideas. Bishop also simplifies some recipies that have been intimidating to me. He makes polenta so simple, I have made it twice now while busy doing other things. I just go in and give it a stir every ten minutes. It was lovely. I wanted to make the garlicky greens on the cover of the book, but found I had no chard. I made it with fresh broccoli florets, and it was a pleasure. The instructions for risotto are likewise easy and encouraging. All the recipes in this book can be made without fuss and turn out impressively. This is a cookbook for real people, who don't have time to cook all day, and normal kitchens. This is absolutely my favorite cookbook. I make my first risotto next week!

Review: I grew up with wonderful Italian food cooked by my extended family, and since turning vegetarian I've missed a lot of those exquisite flavors and textures. This book has them all! And the recipes are so easy to follow, producing really professional-looking results. My friends are always impressed.

Review: I have always loved risotto, but was too intimidated to try to make it myself. Now I make it all the time, thanks to the beautiful recipes in here -- and it's so easy! AND -- I like my own risotto from this book much better than the risotto I get in restaurants. I've stopped ordering risotto out altogether.

Every recipe I've tried in the book (not just risotto) has been a treat. This is one of my 2 favorite cookbooks in the world. If you love Italian (authentic Italian), you'll love this. Vegetarian or carnivore, you'll love this.

Summary: My favorite cookbook
Review: I have been vegetarian for 8 years. Tofu and tempeh are wonderful, but it is refreshing to cook authentic, tasty Italian food with no fuss. The recipes in this book are simple and delicious-- they are the kinds of dishes a vegetarian would order at a restaurant. My favorite recipes include Chickpeas Simmered with Tomatoes and Rosemary; Squash Ravioli with Sage and Parmesan; Fettucine with Zucchini, Lemon and Mint; and Lemon Risotto. Plus his suggested menus are right on the mark. This is a big book with lots of recipes, and chapters including pasta, rice, polenta, gnocchi and fritters, eggs, legumes, pizza, panini and bruschetta, and more. If you watch Italian cooking shows, longing for a vegetarian version, this is the one.
