Rating:  Summary: Okay, maybe just 4.5 stars Review: Mr. Alan M. Shurgin from Waller County, Texas who has a review below, obviousley has issues that will require professional help if they are to be resolved. This was not supposed to be a vegetarian cookbook. Nor was it supposed to be sensitive to someone's cultural dining needs. If it isn't your kind of book, don't buy it you idiot! On the other hand, if you're looking for a good number of highly refined recipies, then this might be right up your alley.
Rating:  Summary: Shut Up and Cook Review: My sercet: 1) I am not an experienced cook; 2) I am not a frequent cook; 3) I am not a good cook. My Secret Weapon: Louisiana Real and Rustic.There is never a family get together where I don't whip up one of Emeril's recipes and knock everyone out. Take the pecan pie recipe - Because of this book, I always can savor that moment when the fork is about to touch the lips and know it will be followed by rave reviews. My favorites are "Oh-My-God...", "Mmmmmm, this is REALLY good! "I MUST have your recipe." Thanks, Emeril.
Rating:  Summary: Real and Rustic Review: Not what I'd call a great book on Louisiana cooking. Emeril had some interesting ideas at one time, but he didn't put them into this book. Too many 'Emeril' touches to what were classic dishes, and not enough good old basics. There is an art to cooking really good Louisiana food, and Emeril has missed the boat.
Rating:  Summary: All good in the ivhouse when cooking from this book. Review: Purchased this book for my wife in 1998 and have used several of the recipes and all are excellent. Friends love the "Rustic Rub"! We also like how he's added a little information about the origin of the dishes or food item. Our friends in California, Washington and now Maine will tell you this book is a keeper.
Rating:  Summary: Real and Rusted Review: Should have been Real and Rusted. I couldn't find one good recipe that didn't call for a three page list of ingredients. This is just not worth the money. And yes, there are people who don't like Emeril.
Rating:  Summary: Excellent-for authenticity and ease of preparation. Review: Some cookbooks are hard to follow, and some are virtually impossible to cook from. I found Real & Rustic to be very easy to follow and everything I have prepared out of it to this point was unusually easy and very good. I personally like the write-ups done before each recipe that explain how the dish is prepared, how it came to be, and a little history behind each one. I would recommend this book to anyone who enjoys cooking and eating authentic Louisiana food. My favorite recipe is the boudin. It's superb and easy. Greg Amann Orlando,Fl.
Rating:  Summary: I know it's Rustic, but the recipes are lost in this book Review: The newest Food Network superstar could become the next Paul Prudhomme and has put a lot of "BAM" into his recipes. Emeril Lagasse's Louisiana Real & Rustic is his second book and whereas the layout of the book itself does not view well for the eyes, the recipes themselves are outstanding. Emeril Lagasse, a former executive chef at Commander's Palace in New Orleans doesn't use fancy names for his dishes or give every detail in the cooking directions. However, for the person who has more than just a little knowledge in the culinary arts the final products created are mouth watering delicacies: Oyster and Spinach Soup, Duck and Wild Mushroom Gumbo, Shrimp Pernod, Catfish Pecan Meuni(re, Pepper-Stuffed Turkey, Crusted Tenderloin of Rabbit and Creole Cream Cheese Ice Cream. Louisiana Real & Rustic may be a bit primitive yet has the personality that really does make you want to say "BAM". Louisiana Real & Rustic by Emeril Lagasse is published by Morrow Publishing. Recipes are written somewhat crudely but the products are of premiere quality

Rating:  Summary: This was embarrasing Review: The recipes in this book made me sick. I tried them exactly the way they were written. It was bad. Watching Emeril on TV is painful enough, but I thought I'd give him the benefit of the doubt. Sorry, I was wrong. This book should be discontinued.
Rating:  Summary: No good Review: The recipes in this book were hard to follow, and the measurements came out all wrong. It was no good at all. I've lived in Louisiana all of my life, and the food in this book hardly resembled anything I grew up with.
