Eat to live, then live to eat! If there is only one Cajun cookbook you want for your library, this is it! Easy to follow, fun to read, chock full of mouth-watering and interesting reading. Chef Lagasse found his niche and jumped in headfirst!
Rating:  Summary: Good Collection If You Don't Know Louisiana Cooking Basics Review: These dishes are quite ordinary in Louisiana. Many are quick and easy to prepare. The clue is to use what you have on hand, and keep it simple. Experiment with what you think might taste good together. Unless you live in Louisiana, you probably won't be able to get many of these ingrediences fresh. Substitute what you can get--fresh is always better than frozen.
Rating:  Summary: Someone Help Review: This book is a good find but some of the recipes call for exotic foods. Maybe it is because I live in a place where exotic is something you read about in books but some of the recipes calls for such things as duck, rabbit, or snapper. I haven't got a clue of how to obtain anything like that. Other than that the recipes are delicious, especially the banana nut bread.

It is easy to follow and teaches you the basics in minutes. I highly recommend this as a staple for your kitchen if you are interested in Cajun/Creole food.
Rating:  Summary: No pictures needed Review: This is a good book for many reasons, one of which is the total lack of pictures. I'm tired of books in which 75% of the book is made up of gorgeous pictures, and the rest are recipes that might get you there (most often not). A friend of mine who owned 2 restaurants told me that when she went to a professional cooking school, should found out that a majority of the books out in the world are written so poorly you can never reach the goal of the recipe (taste, texture). She said there are a few books that you can almost always hit the mark. I find that true with this book. I can tweak, add, or take from his recipes and they still turn out great. Additionally, since there is no fancy pants pictures, I get more recpies for my money and I don't feel deflated when my meal comes out...slightly messy. I gave 4 of these books as Christmas presents last year and many of the receivers have raved about how good the recipes have been. My favorite from this book is the bouillabaisse recipe. My friends want me to cook it so often that now I limit them to only twice a year. However, now that they have the cookbook, they don't need me anymore!Surprisingly, watching his TV show annoys me so I don't watch it for more than 2-3 minutes as I channel surf. It must be a good book!

Rating:  Summary: A great cookbook! Review: This is one of the more used cookbooks in my collection. Most of the recipes in this book contain ingredients that are easy to find (In Wisconsin in winter, nontheless!) and directions that are easy to follow. Most of the recipes I have tried don't take too long considering they are cajun/creole foods. I usually keep a jar full of the rustic rub around and I use it on everything; fish, chicken, steaks, potatos, everything. A few of the recipes are things most of us are familiar with but with little twists like adding orange zest to french toast (pain perdu, at least I never did that before...). Most of the recipes I have tried can be made in under an hour, good for special weekday dinners. In short, if you like to cook, don't mind spending a little extra time in the kitchen, like to eat great tasting food that isn't too hard to make, check out this cookbook. You'll like it.
Rating:  Summary: You'll want to try each recipe at least once Review: This is the best cookbook in my collection, bar none. My favorite recipe to date? Turkey-bone gumbo. Or maybe it's Pepper Stuffed Turkey. Or-- well, just get the book and decide for yourself, you will not be dissapointed.
Rating:  Summary: Where Did All The Stuffed Shirts Come From? Review: To all of you so called "critics" out there who tried Emeril Lagasse recipes, and you and your company became sick which resulted in you not being able to continue with your culinary entertainment...I feel sorry for you. Life is too short to not be able to ad lib a little and "play" while you attempt to entertain the ones you love. Try hearing when the words spoken are "it's not rocket science". Unless you are cooking for the Queen of England, try to have some fun. I have two children, and YES I do BAM! once in a while. Maybe you need to take a few yoga classes instead of straining to critic something that you obviously do not enjoy doing, eh? Emeril entertains us all with enthusiasm and an abundance of talent. Just because he seems a little outgoing does not mean he is chasing the dollar. I am sure you critics would jump on the chance of doing a television show about what you loved to do most, all the while doing it very well -- and get paid for it! ALL of his books in my opinion are great. It just takes having an open mind for those who tend to view a cooking recipe as if it were an algebra problem. His cookbooks present preparing food in "his" way...original and fun. Emeril is extremely educated and started at a young age in the art of culinary creations. I do not come from Louisiana, but I love Louisiana style food, and his book, "Louisiana Real and Rustic" is RIGHT ON! I have tried several recipes and I'm quite happy with the results as well as my guests. Please Emeril, keep bamming!
Rating:  Summary: Not a good book Review: To many glaring mistakes, and not authentic recipes. Emeril likes to make a claim that his recipes are 'old time favorites', but remember, most of them have been 'Emerilized'. That does not always mean that they are good. This whole book is like that. Beware.
