Rating: Summary: remarkably clever Review: i first came across the great "bible" at the local library two years ago. Since then, i have been trying out a number of the recipes and they have all won me praises from my family, friends and colleagues. The book was indeed a god-send and the author truly deserved to be called the "father" of cake-making. This should be the only book that any authentic baker could own because it is precise in its instructions and yet interesting enough to be read over and over again.
Rating: Summary: The authoritative book on baking cakes! Review: I have never had any recipe NOT turn out when following the recipes in this book. Everyone raves about my cakes. In fact, I need to replace my book because I have used it so much the pages are falling out. Rose is truly a remarkable cookbook author and my inspiration.
Rating: Summary: this is the bible, and Rose is a cake-baking god Review: i made hundreds of wedding cakes for a living. i slaved on thousands of cheesecakes, millions of layer cakes, and boatloads of brownies. If only i had been able to escape to the island of sanity and reason that is Rose Levy Berenbaum! I have had this book since the very day it was first published, and voraciously read every word, as if it were a novel, before baking a single cupcake. The extensive use of scientific knowledge and experimentation is a stroke of genius, since anyone who has done any baking to speak of knows quite well that it is science, not an art. Thank you to Rose for making the building of a wedding cake so darn simple. Thank you also for using weights AND measures in your recipes. Weight is so much more exact (don't forget, it's a SCIENCE!)Her innovative straw technique has saved my posterior many, many times. Her buttercream recipes are flawless. this is a real baker's book. This book may confuse the run of the mill idiot, but I just ordered my second copy. I need to have it everywhere I go!
Rating: Summary: Helped Me Make My First Cakes From Scratch Review: Out of nowhere a month ago I got a huge need to start baking cakes (go figure!) and encountered The Cake Bible. What a great book! All the whys and wherefores are thoroughly described and I've been baking one or two cakes a week with stupendous results -- my boys get a kick out of reading the recipies to me and assisting in whatever way possible. The All-Occasion Downy Yellow Butter Cake and the Perfect All-American Chocolate Butter Cake are our current favorites. I have taken the cakes to gatherings and made two for Thanksgiving and the raves were long and loud. People kept saying "your mother must have made this!" The author's Neoclassic Buttercream frosting is great -- not too sweet and very rich and creamy. I recommend this to anyone who wants to learn how to Bake A Cake ! The butter manufacturers should love this book too :)
Rating: Summary: The best cake book I have seen Review: I enjoy this book a lot - I work as a baker for the SPAM and WonderBread crowd, so it's important to my sanity to make things that they'll eat but that will stimulate me and challenge me. This book provides recipes that will please both the sophisticated palate and the person who thinks Rice Krispie bars are gourmet desserts. Thank you Rose, for a wonderful read and a truly useful cookbook!
Rating: Summary: I think this book was a complete waste of time. Review: I think you need to go to cooking school
Rating: Summary: the best dessert cookbook I own Review: The Cake Bible is the most reliable cookbook I have ever encountered. When you are baking a cake it is so important to be able to trust the recipe. Rose Levy Berenbaum's recipes are clear and easy to follow. The methods are fun and innovative and the results are consistantly delicious.
Rating: Summary: Recipes too sweet !!! Review: I have tried a couple of recipes from the book, including the pound cake and the strusel coffee cake. I have found her recipes to be too sweet for my tastes.
Rating: Summary: The perfect cake cook book for novices through experts! Review: I love this book! It has helped my cake baking skills immeasureably. The crowning glory though is that the simplicity and clarity of directions allows my wife, who hates to cook, make incredible cakes easily now. Basically this means that now I don't have to bake my own birthday cakes (I still get to do the others). A must book for home bakers!
Rating: Summary: If you are a home-baker, do not buy this book. Review: This book is too sensitive and too cautious in everything. It's kind of a good book for a professional baker, but not for a home baker. I know baking is science and accuracy matters all the time. but NOT this much. Give me a break.
