Summary: Good recipes & a bit too many photos, but...
Review: .... Mr. Lagasse is here to teach a style of cooking. In myopinion, he is a chef for someone who knows how to cook. He treatsyou as an equal and assumes you know the difference between t. and T.If you don't you need to watch "How to Boil Water" and pickup a home ec. book...or Basic Cooking Skills 101...whatever. And,while I have seen him make some stunning recipes and presentations, heis comfortable with plain and simple "people food" and Ithink that's what this book is all about. There are too manyphotos...but only in that I would like MORE recipes...it is part ofhis people attraction. His style. This is food no one runs from thekitchen or feels inadequate about. You look at it and say...I can dothat. And you do. His "the kitchen is your friend"attitude is what being a good teacher is all about. It is his style,his special "flair" to make you comfortable in the kitchen.....

Review: Although I've only made one dinner from the book, the recipe I chose was inaccurate. There were steps missing in the directions and it forced me to guess. If I had followed the directions as printed, the dish would not have been fully cooked. This book needed to be proof-read a little better.

Summary: Not too exciting - just DELICIOUS food!
Review: Although the book has a few too many irrelevant pictures of his staff, rather than the dishes prepared, virtually every recipe in the book will have you drooling in anticipation. The recipes are easy enough to follow, and I've had nothing but incredible results. The recipe for his Essence was a bonus - I'm using it on everything now!

Summary: Great Recipes Typically Written
Review: Anyone who buys this book because it's called TV Dinners so it's got to be easy home cookin' is being very naive. It says right on the cover that its food he's done on TV, (...)

For novices, the first chapter is amazing. Emeril is the master of roux, and he tells you in volume of butter/flour, not in weight *whew* AND - the BEST veal stock you'll ever make in your lifetime. And yeah, everyone knows how to make mayo, but Emeril's is the best. Just lose the essence. That spice mix is bad. (...)

For the most part, this is a very foo-foo shee-shee book. I mean Stean's Roasted Duck Club Sandwich is to die for!, but 3 days! to make in two different marinades. (...) And for the amount of andouille and chorizo sausage ingredients in the book, you'd think some Bobby (...) Flay was rubbing off.

The food, other than the sausage dishes, are amazing and this rating would be higher but if you've ever read recipes by Emeril before, you know sometimes there's some ingredients listed that he doesn't use, or there's some that aren't listed that he does use. Frustrating when that happens!

Summary: Accessible and Delicious Recipes!
Review: As an avid fan of Emeril's TV shows on the Food Network, I was quick to buy this book when it first came out. As a relative beginner to cooking, I was concerned that the recipes would be too difficult for me and they absoutely were not! While a few of the recipes require many complicated substeps, the vast majority are easy and delicious. This is a can't-miss cookbook with recipes that have become some of my personal favorites. Buy it!

Review: Cool b&w pix (look a bit like a Calvin Klein ad) and good coverage of basic cooking techniques, along w/ Emeril's trademark of de-mystifying 'fancy cooking terms' make this book a great read (and a small window into his life) for his many fans. There's a wide variety of recipes, mostly basic, simple to do but heavy on the 'wow' factor for novice cooks. Emeril's great strengths include his strong, accessible personality and his ability to instill confidence, and both of these come through strongly. But if you're looking for fancy dishes or nifty new techniques with really innovative presentations, this is not the book for you. Buy this book for 2 reasons: either you are into the Cult of Emeril and just can't get enough of the guy on TV, or you are new to cooking (or never learned the basics) and want an easy & painless way to learn them. Overall, it was light entertainment, with the (out-of-focus) pictures of Emeril & Co. overwhelming the recipes.

Review: Energetic TV chef who whether you dig his hyped up lines on the show (I tend to ignore all that stuff), this guy knows food and truly is one of the most creative. I get good ideas from his recipes all the time, so I give the guy enormous credit.

This is collection from His live show. I've especially enjoyed the Smoked Trout Hash with Choron Sauce and Leon Pound Cake.

I would estimate that some of these are for intermediate advanced home gourmet. Sources are listed as well as some techniques are very well explained. Chefs learn by trial and error. Don't get discouraged. Keep cooking away.

Summary: Good Book - Great recipes!
Review: Having become an Emeril fan recently, I purchased the New New Orleans Cookbook and loved it. I purchased TV Dinners looking for the same level, and, for the most part, was satisfied. Emeril fans will love this book, not only for the recipes but for the inside looks at the show and its staff. However, those who are not familiar with Emeril and his slightly "offbeat" methods may not like TV Dinners. I have made about 10 of the recipes, and they have all turned out great. This is a treasure trove of good ideas and methods and should be a part of any good kitchen.
