Rating:  Summary: You're not missing anything Review: This cookbook contains a sampling of recipes Emeril Lagasse has created on a number of his television shows available on the Food Network in excess of 17+ hours a week.Pros: - If you typically print Emeril's recipes from the Food Network site, owning his books is the best way to organization. - Those with blind passion for Emeril, will love this book. Recipes I've tried and none I care to make again: - Felicia's Biscuits. Few can produce decent Southern biscuits and Emeril's was no exception. - Goat Cheese and Leek Cake with Lentil Salad. A vegetarian dish with a half-pound of bacon?! - Roasted Eggplant and Garlic Soup. The longer it takes to create a dish, the greater the expectation of full-flavor. This one fell flat. - Old-Fashioned Chocolate Pudding. First time I had anything with chocolate that yielded no flavor. Cons: - More headshots of Emeril then recipes. Performance: Being the host of a cooking show, the assumed responsibility is to teach others "how" to cook and to prepare dishes with proper culinary technique. Emeril has failed in this basic deliverance. Until Emeril, I had never seen anyone jump from cuisine to cuisine with such a lack of knowledge and his fix-all solution to questionable things is to just "Emerilize" it. Whether introducing American or foreign ingredients, he stumbles over his words and what comes out is often nothing near its sound of origin. If he wants to be taken seriously in the public eye, it's essential he not confuse casual and comfortable with ignorant and incompetent. To mark the number of times Emeril has had international guests politely correct his methods while he dismisses the process as a free-for-all, is just frustrating. A bad teacher with bad habits should not be in the spotlight. Emeril is a shining example... it's not what you know, but who you know. Amazon ratings scale: 1 star = Poor

Review: This cookbook lays everything out for you, from the basics of making stock and the ingredients in Essence all the way to the Truffle stuffed chicken legs! BAM! This is a great book, full of fun facts, photos and great recipes! Happy, happy, happy!
Rating:  Summary: Better Luck Next Time, Emeril! Review: What a disappointment! I've enjoyed his show and thought this would be a great first cookbook (of his) to add to my extensive collection. Not to Be! Recipies just didn't work and I'm an experienced cook! I actually tore out the pages with his spice blends to save, and tossed the rest. No point in taking up shelf space! The three recipies I tried failed to pass my taste test and the others didn't even sound good. Just because a dish has weird proportions or exotic ingredients doesn't make it innovative or unique from a culinary standpoint!! After all the purpose of cooking is to make something that TASTES good!!!
